The estate has a long history of agricultural production, especially olives, and it produces an excellent commercial organic extra virgin olive oil . It has its own Tafona - possibly the last working press of its kind on the island. Each year a fiesta is held to make olive oil in the traditional manner. Using a stone mill turned by mule and an enormous oak press, under which baskets of olive mash are placed, oil is made from start to finish by fiesta participants.
